Anicea Campanale – Owner - Executive Chef – Flavor Specialist
When Anicea was three years old her parent’s asked her what she wanted to be when she grew up. Her response, “a tomato!” Although this plan has changed a bit, her enthusiasm for food never has. From a young age Anicea found culinary inspiration from her Italian father and Japanese mother. “It started when I was nine and received a VHS of a new show called Iron Chef. My Japanese wasn’t great and I think my mom secretly wanted me to watch the show to improve my Japanese language skills. Little did she know, it was all about cooking cool stuff; and that has stuck with me. Cooking can transcend any language!” Anicea first learned to prepare healthy California cuisine before acquiring a more global perspective through her world travel and work experience. She studied culinary arts at Le Cordon Bleu in San Francisco and then honed her skills working in restaurants in Napa Valley, California and Melbourne, Australia. Anicea has amassed over a decade of professional cooking experience. She has developed and executed menus for some of the finest restaurants in Hawai’i including Formaggio’s, Taormina Sicilian Cuisine, 53 by the Sea, and Alan Wong’s, as well as running her own kitchen as Executive Chef at Anchor Point Lodge in SE Alaska. When Anicea isn’t cooking exciting new dishes for friends old and new, she enjoys backpacking, surfing, and singing loudly. Through the fusion of her lifetime of experience, professional training, and the dichotomy of her heritage, she knows how to create exciting food. A self-trained cook and self-declared gastronomist Hailey is always stirring up a new recipe or exploring exotic culinary cuisines. On a mission to ultimately taste her way around the globe she is a devoted world traveler who has a deep understanding of the universal language of food and profound awareness of how enjoying food and drink brings people together. Educated at the University of Hawaii with degrees in Anthropology and Chinese, Hailey understands the links between food and culture. With over 10 years of work experience in the restaurant and service industry she is keenly aware of what makes the perfect dining atmosphere. Hailey sets an extremely high standard for customer service and presentation, and possesses the knowledge and grit necessary to be successful in the restaurant industry. With her creative mind and attention to detail you are sure to enjoy dining within the space she creates! When Hailey’s not planning her next dinner party, you’ll find her practicing yoga, studying a new language or burying her toes in the sand.
